Spicy Goan pork sausages (chouriço) sautéed with onion and chilli, stuffed into soft Goan pao — the most popular breakfast street food of Goa.

Ingredients

Method

  1. Remove the chouriço from their casings by cutting them open.
  2. The spiced pork filling will crumble out.
  3. Heat 1 tbsp oil in a pan on medium. Add thinly sliced onion. Cook 5 minutes until softened.
  4. Add the chouriço filling. Cook on medium-high for 5 to 6 minutes, breaking it up with a spoon.
  5. The sausage releases its own fat and red-stained oil as it cooks.
  6. Add finely chopped tomatoes and sliced green chillies.
  7. Cook 4 minutes until tomatoes soften.
  8. Add fresh coriander. Stir.
  9. Slit the pao rolls open without cutting all the way through.
  10. Heat briefly in a dry pan or toaster.
  11. Stuff the warm chouriço mixture into the warm pao.
  12. Serve with a squeeze of lemon and extra green chillies on the side.
