Spicy Goan pork sausages (chouriço) sautéed with onion and chilli, stuffed into soft Goan pao — the most popular breakfast street food of Goa.
Ingredients
- 8 Goan chouriço (Goan pork sausages — spiced with red chilli and vinegar; available at Goan stores and online; substitute with any spicy pork sausage)
- 1 medium onion — thinly sliced
- 2 green chillies — finely sliced
- 2 tomatoes — finely chopped
- 1 tbsp oil
- 4 Goan pao (soft bread rolls — or any soft dinner rolls)
- Fresh coriander and lemon to serve
Method
- Remove the chouriço from their casings by cutting them open.
- The spiced pork filling will crumble out.
- Heat 1 tbsp oil in a pan on medium. Add thinly sliced onion. Cook 5 minutes until softened.
- Add the chouriço filling. Cook on medium-high for 5 to 6 minutes, breaking it up with a spoon.
- The sausage releases its own fat and red-stained oil as it cooks.
- Add finely chopped tomatoes and sliced green chillies.
- Cook 4 minutes until tomatoes soften.
- Add fresh coriander. Stir.
- Slit the pao rolls open without cutting all the way through.
- Heat briefly in a dry pan or toaster.
- Stuff the warm chouriço mixture into the warm pao.
- Serve with a squeeze of lemon and extra green chillies on the side.
