A plain omelette placed in a bowl of spiced coconut curry (ros) — the unique Goan street food where egg and curry are eaten together.

  1. Make the ros: heat 1 tsp oil in a small pan.
  2. Add mustard seeds — pop. Add curry leaves.
  3. Add turmeric, red chilli powder and cumin powder. Stir 20 seconds. Add coconut milk and water. Simmer on low for 3 minutes. Season with salt. Keep warm.
  4. Make the omelette: beat eggs with finely chopped green chilli, onion, coriander and salt.
  5. Heat 1 tbsp oil in a pan on medium-high. Pour the egg mixture.
  6. Cook without stirring for 1 minute until the edges set.
  7. Fold in half. Cook 1 more minute until just set.
  8. To serve: pour a generous ladleful of warm coconut curry (ros) into a deep bowl.
  9. Place the warm omelette on top or partially submerged in the ros.
  10. Eat the omelette and curry together.
