A plain omelette placed in a bowl of spiced coconut curry (ros) — the unique Goan street food where egg and curry are eaten together.
Ingredients
For the omelette:
3 eggs
1 green chilli — finely chopped
1 small onion — finely chopped
2 tbsp fresh coriander
Salt
1 tbsp oil
For the ros (coconut curry):
1/2 cup thick coconut milk
1/4 cup water
1/4 tsp turmeric
1/4 tsp red chilli powder
1/4 tsp cumin powder
1 tsp oil
1/4 tsp mustard seeds
3 curry leaves

Method
Make the ros: heat 1 tsp oil in a small pan.
Add mustard seeds — pop. Add curry leaves.
Add turmeric, red chilli powder and cumin powder. Stir 20 seconds. Add coconut milk and water. Simmer on low for 3 minutes. Season with salt. Keep warm.
Make the omelette: beat eggs with finely chopped green chilli, onion, coriander and salt.
Heat 1 tbsp oil in a pan on medium-high. Pour the egg mixture.
Cook without stirring for 1 minute until the edges set.
Fold in half. Cook 1 more minute until just set.
To serve: pour a generous ladleful of warm coconut curry (ros) into a deep bowl.
Place the warm omelette on top or partially submerged in the ros.
