Andhra vepudu (dry stir-fry) with egg vepudu — spiced with sesame oil and aromatic tempering.
Ingredients
- - 300g egg vepudu
- - 3 tbsp sesame oil
- - 1 tsp mustard seeds
- - 1 tsp cumin seeds
- - 2 dried red chillies
- - 1 onion sliced
- - 1 tsp red chilli powder
- - 1 tsp coriander powder
- - 1/4 tsp turmeric
- - 2 tbsp grated coconut
- - Salt to taste
Method
- Boil eggs: Hard-boil 5-6 eggs — 10 minutes in boiling water. Cool, peel and halve each egg.
- Marinate eggs: Mix halved eggs with half tsp turmeric, half tsp red chilli powder and salt.
- Fry eggs: Heat 2 tbsp oil. Fry the marinated egg halves cut-side down on medium heat 2-3 minutes until golden. Remove.
- Make tempering: In the same oil add 1 tsp mustard seeds. When they pop add 1 tsp urad dal and fry golden.
- Add aromatics: Add 2 dried red chillies, 1 sprig curry leaves, a pinch of asafoetida and 5 sliced garlic cloves.
- Add onion: Add 1 finely chopped onion. Cook 8 minutes until golden.
- Add tomatoes and spices: Add 2 chopped tomatoes and cook 6 minutes. Add 1 tsp red chilli powder and 1 tsp coriander powder. Fry 2 minutes.
- Add fried eggs: Gently add the fried egg halves cut-side up. Toss carefully to coat in the masala.
- Cook together: Cook on medium heat 3-4 minutes.
- Serve: Adjust salt. Kodi guddu vepudu should be golden and well-spiced. Serve with steamed rice.
