Pumpkin or squash cooked simply with ginger, garlic and Naga chilli in the minimal Naga style — a vegetable side for every Naga meal.
Ingredients
- 500g pumpkin or butternut squash — peeled and cut into 3 cm chunks
- 4 garlic cloves — crushed
- 1 inch ginger — sliced
- 1 dried Naga chilli — whole
- 1 cup water
- 1/2 tsp salt
- Fresh local herbs if available
Method
- Place pumpkin chunks in a pot with 1 cup water.
- Add crushed garlic, sliced ginger and dried Naga chilli.
- Bring to a boil. Cover. Cook on medium for 12 to 15 minutes until pumpkin is completely tender.
- Uncover. Cook 3 to 4 minutes until the water has mostly evaporated and the pumpkin is sitting in a very light fragrant broth.
- Season with salt. Garnish with fresh herbs if available.
- Serve with sticky rice.
