Pumpkin or squash cooked simply with ginger, garlic and Naga chilli in the minimal Naga style — a vegetable side for every Naga meal.

Method

  1. Place pumpkin chunks in a pot with 1 cup water.
  2. Add crushed garlic, sliced ginger and dried Naga chilli.
  3. Bring to a boil. Cover. Cook on medium for 12 to 15 minutes until pumpkin is completely tender.
  4. Uncover. Cook 3 to 4 minutes until the water has mostly evaporated and the pumpkin is sitting in a very light fragrant broth.
  5. Season with salt. Garnish with fresh herbs if available.
  6. Serve with sticky rice.
