Thick beaten rice soaked in thick sweetened yogurt and eaten with jaggery — the sacred Makar Sankranti breakfast of Bihar consumed on the first morning of the harvest festival.
Rinse the thick flattened rice briefly in cold water.
Drain. Spread and let rest 5 minutes until the rice absorbs the residual moisture and softens slightly.
The chura should be soft when pressed but not mushy or breaking apart.
Place the softened chura in a bowl.
Pour the sweetened thick yogurt over the chura generously.
The yogurt should cover the rice.
Place jaggery pieces or grated jaggery on top.
Add a pinch of cardamom.
Add banana slices if desired.
Eat immediately — the chura softens quickly in the yogurt and should be eaten within 10 minutes of assembling.
