    About Bihari Bhel Puri: Bhel Puri is sold at every Bihar street market, fair and railway platform — assembled to order in 60 seconds and eaten within 2 minutes before the puffed rice goes soggy. While Mumbai also has its own famous bhel, the Bihari version uses local Bihar chutneys and a more savoury, less sweet balance.

    Understand the timing: Bhel must be assembled and eaten within 2-3 minutes. The salt and chutneys draw moisture out of the puffed rice and tomato, turning everything soggy fast. Have all your ingredients prepped and on the counter before you start mixing.

    Choose fresh puffed rice: Use 3 cups of plain puffed rice (murmura). The grains should be light, dry and crunch loudly when squeezed. Slightly soft puffed rice produces a soggy bhel from the start.

    Revive soft puffed rice: If your puffed rice has lost its crisp, spread on a baking tray and warm in a 150C oven for 4-5 minutes — or dry-roast in a wide pan over low heat for 2-3 minutes, stirring constantly. Cool fully before using.

    Prepare the tomato: Take 1 medium tomato. Cut into very small 5mm dice. Remove the watery seed portion before dicing — the seeds add water that ruins the bhel's crunch.

    Chop the coriander: Take a small handful of fresh coriander leaves with their tender stems. Wash, shake dry and chop finely. Set aside.

    Prepare the lemon: Halve a fresh lemon and have it on the counter ready to squeeze. Always use fresh lemon, not bottled juice, which tastes flat in chaats.

    Get the sev ready: Sev is the crispy chickpea flour noodle topping sold at all Indian groceries. Have 1/2 cup ready. Use thin, fresh sev — old sev tastes rancid.

    Use a wide bowl: Take a wide mixing bowl, not a deep one. A wide bowl lets you toss without crushing the puffed rice.

    Layer the bowl: Place 3 cups of puffed rice in the bowl. Add the diced tomato, chopped onion and sliced green chilli on top.

    Add the chutneys and spices: Drizzle 1 tbsp tamarind chutney and 1 tbsp green chutney over the mix. Sprinkle 1 tsp chaat masala and 1/2 tsp red chilli powder. Add a tiny pinch of regular salt — the chaat masala already has salt, so go easy.

    Toss quickly: Use two large spoons or your clean hands. Lift from the bottom and turn over gently — do not stir round and round, which crushes the puffed rice. Toss just 4-5 times, until everything is evenly coated.

    Top and serve: Sprinkle 1/2 cup sev generously on top — sev goes on last because it loses crunch fast in the wet mixture. Scatter chopped coriander. Squeeze the juice of half a lemon over the whole bowl. Toss once more very gently. Serve immediately in small bowls or paper cones for that authentic street-food experience. Eat within 2 minutes — after that the puffed rice softens and the snack loses its character.
