Fresh tomatoes cooked in a simple spiced preparation topped with thick sev at the last moment — the Gujarati one-vegetable curry where sev does the thickening.
Heat 2 tbsp oil in a pan. Add mustard seeds — pop.
Add asafoetida and curry leaves.
Add finely chopped onion. Cook on medium for 5 minutes.
Add finely chopped tomatoes. Add turmeric, red chilli powder and coriander powder.
Cook on medium for 10 to 12 minutes until tomatoes completely break down and the oil surfaces.
Add sugar and jaggery if using. Season with salt.
Just before serving add 1/2 cup thick sev.
Stir once. Serve immediately — the sev should still be slightly crunchy when it reaches the table.
Serve with roti or thepla.
