Method

    Heat 1 tbsp oil or ghee in a flat pan on medium-high.

    Place kalari cheese disc in the hot pan. Fry for 2 to 3 minutes on the first side until the bottom is golden.

    The cheese will sizzle and crisp on the outside while the inside becomes stretchy.

    Flip carefully. Fry 2 more minutes until the second side is golden.

    While the cheese fries, warm the kulcha by pressing briefly on the hot pan.

    Slip the fried kalari cheese disc into the split kulcha — it should be slightly larger than the bread.

    Serve immediately with green chutney, tamarind chutney, sliced onion and green chilli.
