Measure everything: Keep all ingredients measured and ready before starting.
In pan pour oil or ghee and fry the peanuts in medium heat to start with and then switch to low heat till they become crispy.
In another pan Heat Jaggery adding water slowly and adding Dry ginger powder, cardamom or vanilla or other flavor, till it becomes pasty liquid and not watery.
Transfer all heated peanuts to the pan with jaggery paste and mix.
Mix thoroughly and continue to heat on low heat till the peanuts are evenly mixed with Jaggery paste.
Transfer all the mixture of peanut and jaggery to a wooden or steel base tray greased with oil or ghee or both.
Flatten it with a roller until the surface is even and the mixture is around 1/2 inch thick.
Cut into small square pieces when it is warm.
Cool completely: Let cool 20 to 30 minutes before storing.
Store: Store in an airtight jar at room temperature. Stays crispy for a long time.
