Spicy Goan pork sausages (chouriço) sautéed with onion and chilli, stuffed into soft Goan pao — the most popular breakfast street food of Goa.
Remove the chouriço from their casings by cutting them open.
The spiced pork filling will crumble out.
Heat 1 tbsp oil in a pan on medium. Add thinly sliced onion. Cook 5 minutes until softened.
Add the chouriço filling. Cook on medium-high for 5 to 6 minutes, breaking it up with a spoon.
The sausage releases its own fat and red-stained oil as it cooks.
Add finely chopped tomatoes and sliced green chillies.
Cook 4 minutes until tomatoes soften.
Add fresh coriander. Stir.
Slit the pao rolls open without cutting all the way through.
Heat briefly in a dry pan or toaster.
Stuff the warm chouriço mixture into the warm pao.
Serve with a squeeze of lemon and extra green chillies on the side.
