Eggs scrambled with generous spring onion, ginger and green chilli in the simple everyday Mizo style — a quick protein preparation for daily meals.
Beat eggs with a fork or whisk until combined. Season with a pinch of salt.
Heat 1 tbsp oil in a pan on medium heat. Add grated ginger and finely sliced green chillies. Stir 20 seconds.
Add most of the spring onion (reserve a small amount for garnish). Stir 30 seconds.
Pour in the beaten eggs. Let them set on the bottom for 30 seconds.
Add soy sauce. Scramble on medium heat, folding gently, for 2 to 3 minutes until eggs are just cooked through — slightly soft, not dry.
Taste and adjust salt.
Garnish with reserved spring onion and fresh coriander. Serve with steamed rice.
