Pumpkin or squash cooked simply with ginger, garlic and Naga chilli in the minimal Naga style — a vegetable side for every Naga meal.
Place pumpkin chunks in a pot with 1 cup water.
Add crushed garlic, sliced ginger and dried Naga chilli.
Bring to a boil. Cover. Cook on medium for 12 to 15 minutes until pumpkin is completely tender.
Uncover. Cook 3 to 4 minutes until the water has mostly evaporated and the pumpkin is sitting in a very light fragrant broth.
Season with salt. Garnish with fresh herbs if available.
Serve with sticky rice.
